Zesty Baked Creamy Chicken with Cilantro and Jalapeños
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 cup chicken broth
- 1 can (15 oz) frozen creamed corn, thawed
- 8 oz cream cheese, softened
- 1 can (10 oz) RO-TEL Original Diced Tomatoes and Green Chiles, drained
- 1 tablespoon taco seasoning
- 1 lime, cut into wedges
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions
- 2 tablespoons sliced jalapeños
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
Season both sides of each chicken breast with salt and ground black pepper.
3. Sear the Chicken:
In a large oven-safe skillet, heat the vegetable oil over medium-high heat. Add the chicken breasts and sear for 3 minutes on each side until golden brown. Remove the chicken and set aside.
4. Create the Creamy Base:
Reduce the heat to medium and pour the chicken broth into the skillet. Cook for about 2 minutes, scraping any browned bits from the bottom of the skillet.
5. Combine Ingredients:
Stir in the creamed corn, cream cheese, and RO-TEL diced tomatoes and green chiles. Continue to stir until the cream cheese is fully melted and the mixture is smooth.
6. Add Seasoning:
Sprinkle in the taco seasoning and mix well to incorporate all flavors evenly.
7. Return Chicken to Skillet:
Nestle the chicken breasts back into the skillet with the creamy sauce. Spoon some of the sauce over the chicken.
8. Bake in Oven:
Transfer the skillet to the preheated oven. Bake for 20 minutes until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
9. Garnish and Serve:
Remove the skillet from the oven. Let it rest for a few minutes before serving. Garnish with chopped cilantro, sliced green onions, and sliced jalapeños. Serve with lime wedges on the side for an added zest.
