Zesty Balsamic Chicken Thighs with Basil-infused Potato & Asparagus Medley
Ingredients
For the Chicken Thighs:
- 4 chicken thighs, bone-in, skin-on
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
For the Potato & Asparagus Medley:
- 1 pound potatoes, peeled and chopped into 1-inch cubes
- 1 bunch asparagus, trimmed and chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh basil, chopped
- Salt and pepper to taste
Instructions
Step 1: Prepare the Chicken Marinade
1. In a medium bowl, combine balsamic vinegar, honey, and Dijon mustard. Mix until well combined.
2. Season chicken thighs with salt and pepper. Place them in a large resealable plastic bag.
3. Pour the marinade over the chicken thighs. Seal the bag and massage to ensure the chicken is well coated.
4. Refrigerate for at least 1 hour, or overnight for deeper flavor.
Step 2: Prepare the Potato & Asparagus Medley
1. Preheat the oven to 400°F (204°C).
2. In a large baking dish, combine potatoes, asparagus, olive oil, and chopped basil. Season with salt and pepper. Toss to coat the vegetables evenly.
3. Spread the potato and asparagus mixture in a single layer in the baking dish.
Step 3: Cook the Chicken and Vegetables
1. Remove chicken thighs from the marinade and arrange them on top of the potato and asparagus medley.
2. Pour any remaining marinade over the chicken and vegetables.
3. Bake in the preheated oven for 45 minutes, or until the chicken is fully cooked and the potatoes are tender. An internal thermometer should read 165°F (74°C) for the chicken.
Step 4: Serve
1. Remove from oven and let rest for 5 minutes before serving.
