Zesty Black Bean & Corn Salad with Cilantro Lime Dressing



Ingredients



- 4 cups spring mix or baby lettuces
- 1 cup canned black beans, rinsed and drained
- 1 cup fresh corn kernels
- 1/2 cup fresh cilantro leaves and tender stems, chopped
- 1/2 cup Cotija cheese, crumbled
- 1 lime, juiced and zested
- 1/4 cup mayonnaise
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon kosher salt

Instructions



1. Prepare the Dressing:
- In a small bowl, combine the lime juice, lime zest, and mayonnaise. Whisk together until smooth.
