Zesty Cabbage and Carrot Slaw with Dijon Vinaigrette

Ingredients

- 4 cups shredded cabbage
- 2 cups shredded carrots
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tablespoon sugar
- 1/2 teaspoon mustard powder
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon caraway seeds
- 1/2 teaspoon celery seeds

Instructions

1. Prepare the Vegetables:
- In a large bowl, combine the shredded cabbage (4 cups) and shredded carrots (2 cups). Toss them gently to evenly distribute the vegetables.

2. Make the Vinaigrette:
- In a small mixing bowl or a mason jar with a tight-fitting lid, add the red wine vinegar (1/4 cup), olive oil (1/4 cup), sugar (1 tablespoon), mustard powder (1/2 teaspoon), Dijon mustard (1 tablespoon), salt (1 teaspoon), and black pepper (1/2 teaspoon).
- Whisk the ingredients together until the sugar dissolves and the mixture is well emulsified. Alternatively, if using a mason jar, seal the lid tightly and shake until thoroughly mixed.

3. Toast the Seeds:
- In a small dry skillet over medium heat, add the caraway seeds (1 teaspoon) and celery seeds (1/2 teaspoon). Toast them for about 2-3 minutes, stirring frequently until they become fragrant. Be careful not to burn them.

4. Combine and Toss:
- Pour the vinaigrette over the shredded cabbage and carrots. Sprinkle the toasted caraway and celery seeds over the slaw.
- Toss everything together, ensuring that the slaw is evenly coated with the dressing and seeds.

5. Chill and Serve:
- Let the slaw sit for at least 10 minutes at room temperature for the flavors to meld together. You can refrigerate it for up to 2 hours prior to serving for a cooler, more refreshing taste.
- Serve the slaw immediately once chilled or after the resting period.
