Zesty Cilantro Lime Potato Skillet
Ingredients
- 4 large Russet potatoes, peeled and cubed
- 1 cup distilled white vinegar
- 1/4 cup vegetable oil
- 1/2 cup corn kernels
- 1/3 cup mayonnaise
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/3 cup crumbled Cotija cheese
- Salt and pepper to taste
Instructions
1. Prepare the Potatoes
Place the cubed Russet potatoes in a large pot. Cover with cold water and add 1 cup of distilled white vinegar. Bring to a boil over medium-high heat. Continue boiling for approximately PT10M (10 minutes) or until potatoes are just tender. Drain and set aside.
2. Sauté the Corn
In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add 1/2 cup of corn kernels and sauté for PT3M (3 minutes) until slightly charred and fragrant. Remove from skillet and set aside.
3. Crisp the Potatoes
In the same skillet, add the remaining vegetable oil. Once hot, add the drained potatoes. Season with salt and pepper. Cook on medium-high heat for PT15M (15 minutes), turning occasionally, until golden and crispy on the outside.
4. Prepare the Dressing
While the potatoes cook, mix the mayonnaise, lime juice, and chili powder in a small bowl. Stir until smooth and well combined.
5. Combine and Serve
Add the sautéed corn and chopped cilantro to the skillet with the crispy potatoes. Gently toss to combine. Drizzle the lime mayonnaise dressing over the potatoes and toss until everything is evenly coated.
6. Garnish
Sprinkle the crumbled Cotija cheese over the top. Serve immediately for a delightful lunch that packs a punch of flavor and texture.
