Zesty Fried Corn Bites with Lime
Ingredients
- 4 ears of corn, kernels removed
- 1 quart water
- Juice of 2 limes
- 1 teaspoon salt
- Vegetable oil, for deep frying
Instructions
1. Prepare Corn Kernels
Remove the kernels from the ears of corn and set them aside.
2. Blanch Corn
- In a large pot, bring 1 quart of water to a boil.
- Add the corn kernels and blanch for 4 minutes.
- Drain immediately and spread the kernels on a clean kitchen towel to dry completely.
3. Flavor Corn
- Once the corn is dry, place it in a large bowl.
- Add the lime juice and salt. Toss until the kernels are evenly coated.
4. Heat Oil
- In a deep frying pan or medium-sized pot, pour enough vegetable oil to submerge the corn completely (about 2-3 inches deep).
- Heat the oil over medium-high heat to 350°F (175°C).
5. Deep Fry Corn
- Working in small batches, carefully add the seasoned corn kernels to the hot oil using a slotted spoon.
- Fry the kernels for 3-5 minutes or until they are golden brown and crispy.
- Remove the fried kernels from the oil with a slotted spoon and drain on paper towels.
6. Serve
- Transfer the Zesty Fried Corn Bites to a serving bowl.
- Optionally sprinkle additional lime juice and salt before serving for extra flavor.
