Zesty Lemon Curd Puff Pastry Tarts
Ingredients
- 1 sheet puff pastry (thawed)
- 1 cup lemon curd
- 1 egg
- 1 tablespoon water
Instructions
1. Preheat the Oven: Set your oven to 400°F (200°C) and allow it to preheat while you prepare the pastry.
2. Prepare the Puff Pastry: Unroll the thawed puff pastry onto a lightly floured surface. Using a sharp knife or a pizza cutter, cut the pastry into 9 equal squares.
3. Add the Filling: Spoon a heaping tablespoon of lemon curd into the center of each pastry square. Be careful not to overfill, as the curd will spread during baking.
4. Fold the Pastry: Gently fold each corner of the pastry towards the center, pressing lightly to secure. This will create a small open-topped tart.
5. Prepare the Egg Wash: In a small bowl, beat the egg with 1 tablespoon of water. Use a pastry brush to lightly coat the edges of each tart with the egg wash. This will give them a beautiful golden hue as they bake.
6. Bake the Tarts: Place the prepared tarts on a parchment-lined baking sheet, leaving space between each one. Bake in the preheated oven for 15-18 minutes, or until the pastry puffs up and turns golden brown.
7. Cool and Serve: Once baked, remove the tarts from the oven and allow them to cool on a wire rack for a few minutes before serving. These are perfect served slightly warm or at room temperature.
