Zesty Lemon Paprika Chicken Thighs
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 medium lemon, zested and juiced
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
Instructions
1. Prepare the Marinade
In a small bowl, combine the lemon zest, lemon juice, paprika, garlic powder, onion powder, dried oregano, dried basil, and black pepper. Stir until well mixed.
2. Marinate the Chicken
Place the chicken thighs in a shallow dish or a resealable plastic bag. Pour the prepared marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least PT30M* (30 minutes) or up to *PT2H (2 hours) for deeper flavor.
3. Heat the Butter
In a large skillet over medium heat, melt the butter. Swirl the pan to evenly coat the surface with melted butter.
4. Cook the Chicken
Remove the chicken from the marinade, shaking off any excess. Place the chicken thighs skin-side down in the preheated skillet. Cook the chicken until the skin is golden brown and crispy, about PT10M (10 minutes). Flip the chicken and reduce the heat to low.
5. Finish Cooking
Cover the skillet and continue to cook the chicken on low heat until the meat is cooked through and juices run clear, approximately PT20M (20 minutes).
6. Rest and Serve
