Zesty Lemon Pepper Roasted Chicken Breasts
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 1 tablespoon lemon pepper seasoning
- 1 lemon, thinly sliced
- Salt, to taste
- Fresh ground black pepper, to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Marinade:
In a small mixing bowl, combine the extra virgin olive oil, freshly squeezed lemon juice, lemon pepper seasoning, salt, and fresh ground black pepper. Whisk the ingredients until well blended.
3. Marinate the Chicken:
Place the chicken breasts in a shallow dish. Pour the marinade over the chicken, ensuring each breast is fully coated. Let the chicken marinate for at least 10 minutes.
4. Arrange the Chicken for Roasting:
In a large, ovenproof dish, arrange the chicken breasts in a single layer. Place thinly sliced lemon rounds on top of each piece of chicken.
5. Roasting Process:
Roast in the preheated oven for 25-30 minutes or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.
6. Finishing Touches:
Once roasted, remove the dish from the oven. Allow the chicken to rest for 5 minutes before serving. This ensures the juices are redistributed, keeping the meat tender and juicy.
