Zesty Lemon Tuna & Cannellini Bean Spaghetti Dinner



Ingredients



- 12 ounces of spaghetti
- 3 tablespoons extra-virgin olive oil
- 4 cloves of garlic, minced
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (5 ounces) albacore tuna, drained
- 1 lemon, zested and juiced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup toasted breadcrumbs
- 2 tablespoons capers, drained
- 1/2 teaspoon crushed red pepper flakes

Instructions



1. Cook the Spaghetti
Bring a large pot of salted water to a boil over high heat. Add 12 ounces of spaghetti and cook according to package directions until al dente, about 9 minutes. Reserve 1 cup of pasta water, then drain spaghetti and set aside.

2. Prepare the Garlic Oil
In a large skillet, heat 3 tablespoons of extra-virgin olive oil over medium heat. Add 4 cloves of minced garlic and sauté until fragrant and slightly golden, about 2 minutes. Be careful not to burn the garlic.

3. Incorporate Beans and Tuna
Add the drained cannellini beans and albacore tuna to the skillet. Use a spatula to gently break up the tuna. Stir to combine everything with the garlic oil, cooking for about 2 to 3 minutes, or until heated through.

4. Add Flavor Enhancers
Stir in the lemon zest, lemon juice, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Mix well to coat the beans and tuna evenly.

5. Combine with Spaghetti
Add the drained spaghetti to the skillet along with 1/2 cup of reserved pasta water. Use tongs to toss the spaghetti with the sauce, ensuring it's well combined. Add more pasta water if the mixture seems dry.

6. Garnish and Serve
Remove from heat and stir in 1/4 cup of chopped fresh parsley, 1/4 cup of toasted breadcrumbs, 2 tablespoons of capers, and 1/2 teaspoon of crushed red pepper flakes. Toss thoroughly. Serve immediately for best flavor and texture.
