Zesty Lentil Soup with Kale & Spinach



Ingredients



- 1 cup lentils
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 carrots, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 2 cups vegetable broth
- 2 cups kale, chopped
- 2 cups spinach, chopped
- Juice of 1 lemon
- 1/4 cup fresh herbs (parsley, cilantro), chopped
- 1 teaspoon sea salt, or to taste

Instructions



1. Rinse Lentils: Begin by rinsing 1 cup of lentils under cold water to remove any impurities. Set aside.

2. Sauté Aromatics: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the finely chopped onion and diced carrots, sautéing for about 5 minutes until the onion becomes translucent.

3. Add Garlic and Spices: Stir in the minced garlic, cooking for another minute until fragrant. Add 1 teaspoon each of ground cumin and ground coriander, 1/2 teaspoon ground turmeric, and 1/4 teaspoon black pepper, stirring constantly to toast the spices for about 30 seconds.

4. Combine Broths and Lentils: Pour in 4 cups of chicken broth and 2 cups of vegetable broth. Add the rinsed lentils. Bring the mixture to a boil over high heat, then reduce to a simmer. Cover and cook for approximately 25 minutes until the lentils are tender.

5. Incorporate Greens: Add the chopped kale and spinach to the pot. Stir well, cover, and cook for an additional 5-7 minutes until the greens have wilted and the flavors meld.

6. Finish with Lemon: Stir in the juice of 1 lemon and adjust the seasoning with sea salt to taste. Allow the soup to simmer for another 2 minutes.

7. Serve: Ladle the soup into bowls and garnish with a handful of fresh herbs. Serve hot.
