Zesty Mexican Corn and Cheese Bake
Ingredients
- 2 cups canned Mexican corn, drained
- 1 can (4 ounces) diced green chiles, drained
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1 cup shredded Monterey Jack cheese
Instructions
1. Preheat the Oven:
Set your oven to 350°F (175°C) to prepare for baking.
2. Prepare the Baking Dish:
Lightly grease a medium-sized baking dish with cooking spray or a thin layer of oil to prevent sticking.
3. Mix Ingredients:
In a medium-sized mixing bowl, combine the canned Mexican corn, drained green chiles, and mayonnaise. Stir until well mixed.
4. Add Cheeses:
Gently fold in the grated Parmesan cheese and half of the shredded Monterey Jack cheese into the corn mixture until evenly incorporated.
5. Transfer to Baking Dish:
Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.
6. Top with Cheese:
Sprinkle the remaining half of the shredded Monterey Jack cheese evenly over the top of the corn mixture.
7. Bake:
Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the top is golden brown and bubbly.
8. Cool and Serve:
Remove the baking dish from the oven and let it cool for about 5 minutes before serving. Serve warm as a delightful snack.
