Zesty No-Cook Taco Salad Cups
Ingredients
- 1 cup Cottage cheese
- 1/2 cup Cream cheese, softened
- 2 tablespoons Taco seasoning
- 8 large Lettuce leaves (Romaine or Butterhead)
- 1 cup Cherry tomatoes, quartered
- 1 medium Bell pepper, diced
- 1/3 cup Sliced olives
- 2 Green onions, finely chopped
- 1/4 cup Fresh cilantro, chopped
- 1 tablespoon Cholula or similar hot sauce
Instructions
1. Prepare the Cheese Base:
In a medium mixing bowl, combine the cottage cheese and softened cream cheese until smooth and creamy. Mix in the taco seasoning, ensuring it's well incorporated. Set aside.
2. Prepare Vegetables and Toppings:
Wash and dry the lettuce leaves thoroughly. Chop cherry tomatoes into quarters, dice the bell pepper into small pieces, and slice the olives. Finely chop the green onions and cilantro as well.
3. Assemble the Taco Salad Cups:
Lay the lettuce leaves flat on a large serving platter. Spoon a couple of tablespoons of the cheese mixture onto the center of each leaf.
4. Add Your Veggies:
Evenly distribute the tomatoes, bell pepper, olives, and green onions across each lettuce cup on top of the cheese mixture.
5. Finish with Garnishes:
Drizzle a few drops of Cholula hot sauce over each salad cup for added spice. Garnish with a sprinkle of fresh cilantro before serving.
6. Serve Immediately:
Serve as a refreshing snack, ideal for parties or a quick lunch option.
