Ingredients
- 2 medium red onions, thinly sliced
- 1 cup white distilled vinegar

Instructions
1. Prepare the Ingredients
Begin by slicing the red onions thinly and peeling and smashing the garlic cloves. Slice the small hot red pepper, ensuring you are careful with handling to avoid irritation.
2. Heat the Pickling Liquid
In a medium saucepan over medium heat, combine the white distilled vinegar, granulated sugar, and salt. Stir continuously until the sugar and salt are completely dissolved, approximately 5 minutes (PT5M).
3. Add Aromatics and Spices
Add the whole black peppercorns, cumin seeds, smashed garlic cloves, sliced hot red pepper, fresh rosemary, fresh thyme, allspice, and red pepper flakes to the saucepan. Allow the mixture to simmer for an additional 10 minutes (PT10M) to meld the flavors together.
4. Combine with Onions
Remove the saucepan from the heat and carefully add the sliced red onions to the hot pickling liquid. Stir the onions to ensure they are completely submerged in the liquid.
5. Cool and Infuse
Let the mixture cool to room temperature on the stove. Once cooled, transfer the onions and pickling liquid to a jar or airtight container, ensuring the onions are still submerged.
6. Refrigerate
Seal the jar or container and refrigerate for at least 2 hours to develop flavors. For best results, allow the onions to pickle overnight.
