Zesty Pumpkin Black Bean Tostadas



Ingredients



- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 cup pumpkin purée
- ½ teaspoon kosher salt
- 8 tostada shells
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons fresh lime juice
- ½ cup salsa
- ¼ cup fresh cilantro, chopped
- ¼ cup queso fresco, crumbled
- ¼ cup cotija cheese, crumbled
- ½ cup finely chopped onions
- 1 cup shredded cabbage

Instructions



1. Heat the Oil:
In a skillet, heat 2 tablespoons of extra-virgin olive oil over medium heat. Allow it to warm until it shimmers.

2. Sauté the Aromatics:
Add the minced garlic to the skillet. Sauté for about 1 minute until the garlic is fragrant and light golden in color.

3. Spice It Up:
Stir in 1 teaspoon of chili powder and 1 teaspoon of ground cumin. Cook the spices with the garlic for an additional 30 seconds to release their flavors.

4. Pumpkin Purée Mixture:
Add 1 cup of pumpkin purée to the skillet and stir until well combined with the spices and garlic. Season with ½ teaspoon of kosher salt. Cook for 4-5 minutes, stirring occasionally.

5. Prepare the Black Beans:
In a medium bowl, mash the drained black beans with 2 tablespoons of fresh lime juice until slightly chunky. Mix in ½ cup of salsa.

6. Assemble the Tostadas:
Spread a layer of the pumpkin mixture evenly over each tostada shell. Top with a spoonful of the mashed black bean mixture.

7. Garnish and Finish:
Sprinkle crumbled queso fresco and cotija cheese over the bean layer. Add finely chopped onions, shredded cabbage, and a scattering of fresh cilantro for a burst of freshness.

8. Serve:
Serve immediately to enjoy the tostadas while the shells are crispy and the topping is slightly warm.
