Zesty Sauteed Chicken Noodle Bowl with Nutty Crunch
Ingredients
- Main Components:
- 8 oz Rice noodles
- 1 lb Chicken breast, thinly sliced
- 2 cups Bok choy, chopped
- 1 cup Snap peas, trimmed
- 1 Cucumber, julienned
- 1 Bell pepper, julienned
- 1 Carrot, julienned
- Garnishes:
- 1/4 cup Cilantro, chopped
- 2 Green onions, sliced
- 1 Lime, juiced
- 2 tbsp Slivered almonds
- 2 tbsp Cashews
- 2 tbsp Peanuts
- 2 tbsp Sunflower seeds
- 2 tbsp Pumpkin seeds
- 1 tbsp Sesame seeds
- Dressing and Marinade:
- 1/4 cup Rice vinegar
- 1 tbsp Fresh ginger, grated
- 2 cloves Garlic, minced
- 3 tbsp Hoisin sauce
- 1/4 cup Vegetable oil
- 2 tbsp Sesame oil
- 1/4 cup Soy sauce
- 2 tbsp Peanut butter
- 1 tbsp Sriracha
- 1 tbsp Gochujang
Instructions
1. Prepare the Noodles
- Soak 8 oz rice noodles in hot water for 10 minutes until soft, then drain and set aside.
2. Marinate the Chicken
- Combine 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tbsp grated fresh ginger in a bowl. Add 1 lb thinly sliced chicken breast, coat well, and let marinate for 15 minutes.
3. Make the Dressing
- Whisk together 1/4 cup rice vinegar, 3 tbsp hoisin sauce, 1/4 cup vegetable oil, 2 tbsp peanut butter, 1 tbsp sriracha, and 1 tbsp gochujang. Set aside.
4. Saute the Chicken
- Heat a large pan over medium-high. Add the marinated chicken and saute for 5-7 minutes until cooked through. Remove from the pan and set aside.
5. Saute the Vegetables
- In the same pan, add the bok choy, snap peas, bell pepper, and carrot. Saute for 4-5 minutes until slightly tender but still crisp.
6. Combine Ingredients
- Add the cooked rice noodles and chicken to the pan. Pour the dressing over the top and toss everything together until well combined and heated through.
7. Serve
- Plate the noodle mix and garnish with cucumber, cilantro, green onions, slivered almonds, cashews, peanuts, sunflower seeds, pumpkin seeds, sesame seeds, and a squeeze of lime juice.
