Zesty Shrimp and Avocado Ceviche with a Kick
Ingredients
- 1 lb raw shrimp, peeled and deveined
- 1/2 cup fresh lime juice (about 4 limes)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/2 medium red onion, finely diced
- 1 medium cucumber, peeled, seeded, and diced
- 2 chile peppers, finely chopped (adjust for heat preference)
- 1/4 cup fresh cilantro, chopped
- 1 large avocado, diced
- Salt and pepper to taste
Instructions
1. Prepare the Shrimp
- Cut the shrimp into bite-sized pieces.
- In a medium bowl, combine shrimp with lime juice and lemon juice. Cover with plastic wrap and refrigerate for about 30 minutes until the shrimp turn opaque and are "cooked" by the citric acid.
2. Prep Vegetables
- While the shrimp is marinating, dice the red onion, cucumber, and chile peppers. Set aside.
- Chop fresh cilantro and dice the avocado just before combining to prevent browning.
3. Combine Ingredients
- After the shrimp is ready, drain most of the marinade, leaving about 2 tablespoons behind for flavor.
- Add in red onion, cucumber, chile peppers, and cilantro to the marinated shrimp. Gently fold in the avocado to maintain its shape.
4. Season the Ceviche
- Season the ceviche with salt and pepper to taste. Adjust the acidity by adding more lime juice if desired.
5. Chill and Serve
- Cover and refrigerate the ceviche for an additional 10 minutes to allow flavors to meld.
- Serve chilled, garnished with additional cilantro if desired.
