Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts

- 1 cup chicken broth
- 1 cup Tillamook Spicy Mexican Cheese Blend
- 2 medium tomatoes, chopped
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
1. Prepare the Chicken:
- In a small bowl, mix together the cornstarch, cumin, chili powder, smoked paprika, kosher salt, black pepper, and oregano.
- Coat the chicken breasts evenly with the spice mixture, ensuring both sides are covered.
2. Sauté the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side until browned and cooked through. The internal temperature should reach 165°F (74°C).
- Remove the chicken from the skillet and set aside.
3. Sauté the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the sliced zucchini, yellow squash, and onion to the skillet. Sauté for 5 minutes until slightly softened.
- Add the minced garlic, sautéing for an additional 30 seconds until fragrant.
4. Combine Ingredients:
- Return the chicken breasts to the skillet. Add the pinto beans and chicken broth.
- Sprinkle the cheese blend evenly over the chicken and vegetables.
- Cover the skillet and reduce the heat to medium-low. Allow the cheese to melt, about 3-4 minutes.
5. Finish and Serve:
- Remove the skillet from the heat. Top with chopped tomatoes, avocado slices, and fresh cilantro.
- Squeeze fresh lime juice over the top for added zest.
- Serve immediately with lime wedges on the side.
