Zesty Stove-Top Scrambled Eggs



Ingredients


- 6 large eggs
- 1/4 cup heavy cream
- 1 1/2 teaspoons Worcestershire sauce
- 5-6 dashes of Tabasco sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon butter (for cooking)

Instructions



1. Prepare the Egg Mixture
Crack the 6 large eggs into a medium bowl. Add the 1/4 cup heavy cream, 1 1/2 teaspoons Worcestershire sauce, 5-6 dashes of Tabasco sauce, 1 teaspoon Dijon mustard, and 1 tablespoon lemon juice. Whisk these ingredients together vigorously until they are fully combined and slightly frothy.

2. Season the Eggs
Sprinkle salt and pepper into the egg mixture according to your taste preferences. Whisk again briefly to incorporate the seasonings.

3. Heat the Pan
Place a medium-sized non-stick skillet on the stove over medium-low heat. Add 1 tablespoon butter and allow it to melt fully, swirling the pan to coat the bottom evenly.

4. Cook the Eggs
Once the butter is melted and begins to foam, pour the egg mixture into the skillet. Let the eggs sit undisturbed for 20-30 seconds on medium-low heat until the edges start to slowly set.

5. Scramble the Eggs
Using a spatula, gently push the eggs from the edges towards the center of the pan. Continue pushing and folding the eggs every 10-15 seconds, allowing them to cook slowly. This technique will create soft curds. Be careful not to over-stir, as it can break apart the curds too much.

6. Finalize
Once the eggs are mostly cooked but still slightly runny, remove the skillet from the heat. They will continue to cook from residual heat.

7. Serve
Spoon the zesty scrambled eggs onto plates and serve immediately, garnishing with a sprinkle of extra black pepper or a few drops of lemon juice if desired for added zest.
