Zesty Tropical Salsa with Creamy Guacamole
Ingredients
Salsa:
- 2 ripe tomatoes, diced
- 1 small onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1 serrano pepper, seeded and minced
- 1/2 bunch cilantro, chopped
- 1 lime, juiced
- 1 tbsp lime zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 green chiles, roasted and chopped
- 1 ear of fresh corn, kernels removed
- 4 radishes, thinly sliced
- 1 mango, peeled and diced
- 1/3 cup black olives, sliced
Guacamole:
- 2 avocados, peeled and mashed
- 1 small lime, juiced
- 1/4 tsp garlic powder
- 1/4 tsp salt
Toppings and Accompaniments:
- 1 small bell pepper, sliced
- 1/2 cup sour cream
Instructions
1. Prepare the Salsa:
- In a large mixing bowl, combine the diced tomatoes, chopped onion, minced jalapeño, and serrano peppers.
- Add the chopped cilantro, lime juice, lime zest, salt, black pepper, chopped green chiles, corn kernels, radish slices, diced mango, and sliced black olives to the bowl.
- Gently mix all ingredients until well-incorporated. Let sit for 10 minutes to allow flavors to meld.
2. Make the Guacamole:
- In a separate bowl, mash the avocados until smooth.
- Stir in the lime juice, garlic powder, and salt. Mix well and set aside.
3. Assemble and Serve:
- On a large serving platter, place a mound of the prepared salsa on one side.
- On the other side, spread the creamy guacamole.
- Add the sliced bell pepper around the edges of the platter.
- Serve with a dollop of sour cream on top.
