Zesty Turmeric Tofu & Veggie Breakfast Scramble
Ingredients
- 14 ounces firm tofu, drained and crumbled
- 2 tablespoons nutritional yeast
- 1/2 teaspoon turmeric powder
- 2 cloves garlic, minced
- 1 cup mixed veggies (bell peppers, spinach, onions), chopped
- 1/2 cup boiled soybeans
- 2 tablespoons water
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Tofu:
- Pat the tofu block dry with paper towels to remove excess moisture. Crumble the tofu into small pieces using your hands into a large bowl. Set aside.
2. Mix the Seasonings:
- In a small bowl, combine the nutritional yeast, turmeric powder, minced garlic, 2 tablespoons of water, and a pinch of salt and pepper. Stir until well blended.
3. Cook the Veggies:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped mixed veggies and a pinch of salt. Sauté for about 5–7 minutes (PT7M) until the veggies are soft and the onions are translucent. Transfer the veggies to a plate and set aside.
4. Prepare the Tofu Scramble:
- In the same skillet, add another tablespoon of olive oil. Add the crumbled tofu and the cooked soybeans. Pour the seasoning mixture over the tofu and soybeans.
5. Pan Fry the Scramble:
- Increase the heat to medium-high and stir-fry the tofu mixture for about 2–3 minutes (PT3M) to allow the tofu to absorb the flavors and to achieve a lightly crispy texture.
6. Combine and Cook:
- Add the sautéed veggies back into the skillet with the tofu scramble. Stir everything together and cook for another 2 minutes (PT2M) to ensure the flavors meld together. Adjust seasoning with additional salt and pepper if needed.
7. Serve and Enjoy:
- Turn off the heat and remove the pan from the burner. Serve the scramble hot with your favorite breakfast addition like toast or avocado slices.
