Zesty Yukon Gold Potato Salad with Dill Pickle
Ingredients
- 2 lbs Yukon Gold potatoes
- 1 tbsp Kosher salt
- 4 large eggs
- 1 cup mayonnaise
- 2 tbsp dill pickle relish
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 1/2 tsp paprika
- 2 stalks celery, finely chopped
- 1 small yellow onion, finely chopped
- 1/2 tsp black pepper
- Additional Kosher salt to taste
Instructions
1. Prepare the Potatoes:
- Place the Yukon Gold potatoes in a large pot and cover them with water. Add 1 tablespoon of Kosher salt.
- Bring the water to a boil on the stove over medium-high heat, then lower to a simmer.
- Cook for about 15-20 minutes, or until potatoes are tender and can be easily pierced with a fork.
- Drain the potatoes and set aside to cool.
2. Boil the Eggs:
- In a separate pot, cover the eggs with water. Bring to a boil over medium-high heat.
- Once boiling, cover the pot, turn off the heat, and let the eggs sit for 9-12 minutes.
- Drain the hot water and cool the eggs in ice water. Once cooled, peel and chop them.
3. Mix the Dressing:
- In a large bowl, combine the mayonnaise, dill pickle relish, yellow mustard, apple cider vinegar, and paprika.
- Stir well to create a smooth dressing base.
4. Assemble the Salad:
- Cut the cooled potatoes into bite-sized pieces and add to the dressing.
- Add the chopped eggs, celery, and yellow onion to the mixture.
- Season with black pepper and additional Kosher salt to taste.
- Gently fold all ingredients to combine without mashing the potatoes.
5. Chill the Salad:
- Cover the potato salad and chill in the refrigerator for at least 1 hour to allow flavors to meld.
- Serve cold and enjoy.
