Zesty Zucchini & Cheese Dinner Bread
Ingredients
- 2 cups all-purpose flour
- 1/2 cup white granulated sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1 tablespoon dried minced onion flakes
- 1 cup buttermilk
- 1/2 cup melted butter (plus extra for greasing)
- 2 large eggs
- 1 1/2 cups shredded zucchini (drained)
- 1 cup shredded mozzarella cheese
Instructions
1. Preheat Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare Baking Pan:
- Grease a 9x5-inch loaf pan with some melted butter; set aside.
3. Mix Dry Ingredients:
- In a large mixing bowl, whisk together the all-purpose flour, white granulated sugar, baking soda, baking powder, salt, oregano, garlic powder, and dried minced onion flakes until well combined.
4. Combine Wet Ingredients:
- In a separate bowl, beat together the buttermilk, melted butter, and eggs until the mixture is smooth.
5. Create the Batter:
- Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and stir gently until just combined.
- Fold in the shredded zucchini and shredded mozzarella cheese. Be careful not to overmix; the batter should be lumpy.
6. Fill Loaf Pan:
- Pour the batter into the prepared loaf pan, using a spatula to spread it evenly.
7. Bake:
- Place the loaf pan in the preheated oven and bake for about 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
8. Cool:
- Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
