Zucchini Breakfast Loaf with Cinnamon Swirl
Ingredients
- 1 ½ cups all-purpose flour
- ¾ cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon kosher salt
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup milk
- 1 cup grated zucchini
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Prepare the Baking Pan
Grease a 9x5-inch loaf pan with a little butter or cooking spray and line with parchment paper for easy removal.
3. Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, cinnamon, baking soda, baking powder, and kosher salt.
4. Combine Wet Ingredients
In a large mixing bowl, combine the melted butter and light brown sugar, whisking until the mixture is smooth. Add the eggs one at a time, beating well after each addition. Stir in the milk until fully incorporated.
5. Prepare the Zucchini
Grate the zucchini with its skin on using a box grater. Gently squeeze out any excess moisture using a clean kitchen towel.
6. Combine the Mixtures
Gradually add the dry ingredients to the wet ingredients, stirring just until no flour pockets remain. Fold in the grated zucchini, taking care not to overmix.
7. Transfer to Loaf Pan
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
8. Bake the Loaf
Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean or with a few moist crumbs.
9. Cool and Serve
Allow the loaf to cool in the pan for about 10 minutes. Carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely before slicing. Enjoy a warm slice for an indulgent breakfast or brunch.
